My family loves this soup! It is a beefy, meaty version of vegetable soup. In this step by step, I made it in my kitchen at home using my stove and pressure cooker. I also make it when we are out camping. It can also be slow cooked in a crock pot. When camping with out hookups and restricted on generator hours this meal is very handy! So here we go!!

Ingredients:
2lbs Ground Beef
Garlic infused oilÂ
1/2 onion Chopped
1 tablespoon of minced garlic
30 oz of condensed beef broth
28 oz of diced tomatoes basil, garlic & oregano
1lb peeled mini carrots
1 can of green beans
3 cups of water
4 peeled and cut potatoes
2 teaspoons of dried parsley
1 teaspoon of dried basil
1/2 teaspoon of dried thyme
Salt and pepper as desired
Prep time with uncut potatoes.. 30 mins. 15 -20 with prepared potatoes.
Pressurized Cook Time 16 minutes.
(For slow cooker or crock pot cook on high for 6 to 7 hours or until potatoes are desired texture.)



When potatoes are on sale I peel, cut and Blanche them then freeze bags full for soups or roast.

Turn your pressure cooker to reheat or warm. Add your beef broth and potatoes.

Next add your tomatoes, green beans and carrots. You could throw in a little bit of celery if you wish here.. We do not like celery.

Now use a bit of oil to brown your beef.. I use Pampered Chef Garlic infused.

Another PC favorite the mix and chop! Chop the meat to little chucks and leave to brown.

While the meat starts to brown, cut and chop half an onion.

Add the onion and the minced garlic to the meat and mix.

Cover and cook …..

Until no longer pink! Done!

Drain… ( drain guard so handy..also PC)

Add your meat to the pot.

I hand grind my basil and thyme using a tart shaper. After grinding add to the pot.

Now gently stir the mixture.

Now sprinkles the top with dried parsley.

Set pressure cooker to soup, close lid, and turn value to airtight. After pressurizing cook time is 16 minutes.
