Instant Pot Beefy Bacon Cheeseburger Macaroni

Equipment

  • 3 quart Instant Pot Pressure cooker

Ingredients

  • 2 tbsp butter
  • 1/2 lb 93% lean ground beef
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp dry / ground mustard
  • 1/2 cup chopped onion (1/2 tsp of onion powder can be substituted)
  • 10.5 oz condensed can Cheddar Soup
  • 1 cup Milk
  • 8 oz uncooked elbow macaroni
  • 8 oz shredded Cheddar Cheese
  • 2 cups water
  • 1 1/2 cups Bacon Bits or chucks

Instructions

  • Turn on the Saute function. Once the screen reads HOT, add Ground beef.
  • As the meat starts to brown. Use a wooden spatula to chop into crumbles.
  • Add Dry Mustard, salt, pepper, and onion. Cook until beef is no longer pink and onion is translucent.
  • Turn off Saute function. Now stir in cheddar soup and milk. Stir very well.
  • Add 2 cups of water and stir in Macaroni. Mix thoroughly.
  • Secure lid. Use the manual pressure cook function and set timer for 5 minutes. Set release value to seal.
  • When cook time is complete use a quick release. Remove lid.
  • Stir in shredded cheese until melted.
  • Sprinkle in desired amounts of bacon pieces and serve.

Instant Pot Country Style BBQ Rib

  • 6 Qrt Instant Pot
  • Large bowl

Ingredients

  • 1 1/2 cups Ketchup
  • 1/2 cup Distilled Vinegar
  • 1 tbsp Old Bay Seasoning
  • 1 tsp Liquid Smoke
  • 1/2 cup Brown Sugar
  • 1 1/2 cups Water
  • 3 lbs Country Style Spare Ribs

Instructions

  • In your mixing bowl combine Ketchup, Distilled Vinegar, Brown Sugar, Liquid Smoke, and Old Bay Seasoning. Mix until thoroughly blended.
  • Add 1 1/2 cups of water to 6 quart Instant Pot.
  • Using the pressure cook function set timer for 15 minutes,
  • Add Country Style Spare Ribs to Instant Pot
  • Pour BBQ mixture over ribs and close the lid. Set venting to SEAL.
  • Once the pressure cook time has completed, manually release pressure.
  • Use thong to remove ribs and place on a plate. Spoon BBQ mixture over ribs.
  • So added flavor broil the ribs for 5 minutes in your oven.

This labor day weekend, I took my Instant Vortex Plus outside our camper to our picnic table and I made Cinnamon Rolls. … from a tube. It was a busy weekend of soccer practice, cleaning, laundry, cook outs, boat rides on the lake and campfires with friends. I did not have time to make Cinnamon Rolls from scratch and you know what… they were Delicious!!

Here is how I make them and you can to:

Instant Vortex Plus Cinnamon Rolls ( Store Bought )

When you don't have time to make them from scratch… it is okay to use a tube of Cinnamon Rolls!

  • Instant Vortex Plus Air Fryer Oven
  • Baking pan

Ingredients

  • 1 tube Cinnamon Rolls
  • 1 Baking spray I prefer Coconut Oil Spray

Instructions

  • Pre-Heat the Instant Vortex Plus on Bake mode with the temperature at 320 degrees. Set timer for 12 minutes.
  • Spray your pan with baking spray. I prefer to use coconut oil spray.
  • Open your tube of Cinnamon Rolls and set the icing to the side. Now place your Cinnamon Rolls in the pan.
  • When the Vortex reaches temperature add your pan to the center and cook for 12 minutes.
  • When they have finished baking, remove pan and smear icing on top of each roll.
  • Remove from pan and serve. Enjoy!

Spaghetti doesn’t have to be homemade sauce and pasta to be good. Spaghetti can be good with store bought sauce and pasta.. that you just dump and go! This recipe is perfect is perfect for when your short on time, but want hearty spaghetti with flavor.

Since it cooks unsupervised and is only one pot, My family loves it for the nights we have soccer practice or a game. We when get home we are hungry and ready to eat. I can make this spaghetti in the time it takes them to pull out the books and get started on homework.

Instant Pot Spaghetti

Prep Time10 mins

Equipment

  • Instant Pot 6 quart

Ingredients

  • 1 lb Ground Beef 90/10 – Preferred
  • 4 cups Water
  • 1 32oz Spaghetti Sauce Hunts Garlic and Herb – Preferred
  • 1 package Spaghetti Pasta Noodles

Instructions

  • Using the Saute Function, brown ground beef in the Instant Pot.
  • Remove brown beef and set aside.
  • Break pasta noodles in half. Layering in criss crossed pattern in the bottom of Instant Pot. Cover noodles in 4 cups of water. Swish noodles to wet them.
  • Add browned ground beef to top of noodles. DO NOT STIR.
  • Add 32 oz jar of Spaghetti sauce to top of beef and noodles. DO NOT STIR.
  • Close lid and set venting to sealed.
  • Use the manual / pressure cooker button function and set cook time to 6 minutes.
  • Once the pressure cooking has completed. Manually release the pressure.
  • Stir Spaghetti, Serve and Enjoy.

Optional

  • Top with shredded mozzarella, a Garlic and Parsley salt.

One of my families favorite camping meals! Meatballs and pasta made in my Instant Pot.

Italian Style Meatballs – (for us about 24)
32 oz Spaghetti Sauce
16oz Package of Penne Rigate pasta
About 28oz of Water
Tablespoon of Minced Garlic
1/2 teaspoon of Italian Seasoning

1. Set your pressure cooker for a 7 minute under pressure cook.

2. Layer the meatballs in the bottom of your pressure cooker.

3. Pour in package of Penne Rigate pasta.

4. Add in entire jar of sauce

5. Add about 28oz of water to sauce jar, shake, pour around edge of cooker until pasta is covered but does not float.

6. Add Minced Garlic and Italian Seasoning on top of sauce. DO NOT STIR INGREDIENTS.

7. Close up pressure cooker, make sure exhaust value is on airtight. Allow it to come to pressure and cook.

8. When it has cook under pressure for 7 minutes, release pressure, stir and serve.

We like to add some mozzarella cheese to our bowls and also a side of garlic bread or knots.

Instant Pot Popcorn

Most owners do not know they can make Popcorn in their Instant Pot.  We are living full time in our RV and space is limited. There just is not room for items with a single purpose, which is another reason I love the Instant Pot. It is so versatile. It is a slow cooker, pressure cooker, electric skillet, popcorn maker, and so much more all wrapped up in one electronic.

Here is how we make Popcorn in our Instant Pot:

  • 2 tbsp Coconut Oil (Can substitute Corn or Vegetable.)
  • 1/4 cup Popcorn Kernels

Optional

  • 1 tsp Popcorn Seasoning

  • Using the stainless liner, Set Instant Pot to Saute and adjust the heat to high.
  • Add 2 tbsp oil to pot.
  • (Optional) Add 1 Tablespoon of popcorn seasoning. Stir into oil.
  • Pour in 1/4 cup of popcorn Kernels
  • Once 2/3 of the Kernels have popcorn, turn the instant pot off. Allow the remaining kernels to pop. 
  • Dump into a bowl and salt to preference. Enjoy!!

Chris and Madison love when I make my American Goulash. It is not Hannah’s favorite but she likes it, She had it for the first time for dinner on Thursday night. I prefer it with a bit of cheddar cheese sprinkled in and a side of saltine crackers. We make it at home in the winter, also while out camping in the early spring and late fall.  I hope you enjoy this as much as we do.

Instant Pot American Goulash

A classic meal done quickly and deliciously in minutes in the Instant Pot!

Ingredients

  • 2 lbs Ground Chuck
  • 1 Medium sized White Onion Chopped
  • 1 tbsp Minced Garlic
  • 2 14.5 oz cans Diced Tomatoes
  • 1 15 oz Tomato Sauce
  • 4 cups Water
  • 2 Bay Leafs
  • 1 tsp Seasoned Salt ( I prefer Laundry's)
  • 2 tsp Dried Oregano
  • 2 tsp Dried Basil
  • 4 tsp Soy Sauce
  • 1 16 oz package of Macaroni Noodles

Optional

  • Shredded Cheese
  • Crackers

Instructions

  • Using your instant Pot Saute mode. Brown your 2lbs of Ground Chuck. (Do not drain any grease.)
  • Add Tomato Sauce, Soy Sauce and diced tomatoes to the Instant Pot on top of your now cooked Ground Chuck. 
  • Add 1 tablespoon of Minced Garlic.
  • Add chopped Onion.
  • Add 16 oz of Elbow Macaroni Pasta.
  • Add 4 cups of Water.
  • Grind your dried spices ( Oregano and basil) and then add them.
  • Add 2 Bay Leaves.
  • Add 1 Tsp of Seasoned Salt ( I prefer Landry's).
  • Stir all the ingredients.
  • Turn on your Instant Pot or Pressure Cooker to soup mode. Set the under pressure cooking time to 6 minutes.
  • Add your lid to your Instant Pot and set vent to airtight or seal. 
  • Once the pressure cook time has lapsed. You will quick release the pressure from your Instant Pot. I like to cover my pot with a dish towel to protect my cabinets from the steam.
  • Serve your Goulash with a sprinkle of your preferred cheese mix in and a side of your favorite crackers. Now Enjoy your dinner.

 

American Goulash – Pressure Cooked

(In my 8-quart Elite Pressure cooker)

 

Ingredients you will need:

2lbs of Ground Chuck

1 onion chopped

1 tbsp of Minced Garlic

2 – 14.5oz cans of diced tomatoes

1 – 15 oz can of tomato sauce

4 cups of water

2 Bay leafs

1 tsp of seasoned salt

2 tsp of dried Oregano

2tsp of dried basil

4 tsp of soy sauce

1 16oz package of elbow macaroni noodles

Shredded Cheddar Cheese (optional)

Saltine Crackers (optional)

 

 

 

 

 

Step One:

Using your pressure cookers browning mode brown your 2lbs of ground chuck. ( Do not drain any grease.)

 

Step Two:

Once the meat has brown add tomato sauce and diced tomatoes to the top of the hamburger. ( I prefer Hunts brand for the sauce and tomatoes)

 

 

Step Three:

Add 1 tablespoon of Minced Garlic.

 

 

Step Four:

Added your chopped onion. 

 

 

Step Five:

Add 16oz of elbow macaroni pasta.

 

 

Step six:

Add 4 cups of water And 3 tsp of soy sauce.

 

Step seven:

Grind your dried spices before adding your combined Oregano and basil. 

 

 

Step eight:

Add 2 Bay Leaves

 

 

Step nine:

Add 1 tsp of seasoned salt. (I prefer Landry’s)

 

Step Ten:

Mix your ingredients.

 

 

Step eleven:

Set Pressure Cooker to soup mode and cook under pressure for 6 minutes. 

 

 

 Make certain your pressure release value is set to airtight.

 

Step Twelve:

Once the pressure cook time has elapsed, use the Quick Release method to release the pressure.

 

 

 

 

Step Thirteen: 

Serve with a sprinkle of cheddar cheese and a side of saltine crackers. Enjoy and Happy Camping!!

I like to use Chili as a base for a couple of different meals… Chili, Frito Pies, On baked potatoes, Chili buns and hot dogs. I am not a fan of a super spicy, Hot Chili. So I have been trying to find something that is quick, easy, mild and delicious. I finally did it, and I am going to share it with you! Using my 6 quart pressure cooker like an electric skillet, making this a one pan meal!

 

 

Instant Pot - Quick & Easy Chili

Not complicated.. just a quick and delicious Chili.

Ingredients

  • 2 lbs Ground Chuck Beef
  • 2 14.5 oz cans of diced or crushed tomatoes
  • 1/2 cup McCormicks Chili Seasoning
  • 1/3 tsp Tony's Creole Seasoning
  • 1 15 oz can of Kidney Beans Optional

Optional

  • Cheddar Cheese
  • Saltine Crackers
  • Frito Chips - Personal Favorite
  • Chopped Onion

Instructions

  • Use the Instant Pot in sauté mode (If your cooker does not have this setting you can choose any setting with at least 10 minutes.)
  • Now brown the hamburger meat .. do NOT drain the grease.
  • Now add in the UNDRAINED 2 14.5oz cans of tomato's.
  • Stir the tomato's until they are distributed evenly in the meat.
  • OPTIONAL - Add the 15 oz can of Kidney Beans
  • Stir in 1/2 cup of McCormicks Chili Seansoning and 1/3 tsp of Tony's Creole Seasoning. Continue to stir your ingredients until it bubbles. 
  • Once the Chili starts to bubble switch your Instant Pot setting to warm. Serve in a bowl. Now enjoy some Chili, add your favorite toppings!!

Looking for a side dish for a BBQ or grilling at your campsite? Nothing says summer like Corn on the Cob, It makes visions of watermelon, fireworks, lake swimming and camping come to mind!

My family loves Corn on the Cob. Mostly we smoother it in butter or sprinkle on some Tony’s Creole. Corn on the cob goes great with just about any main dish… Chicken, Hamburgers or as we did last night, with some juicy steaks and baked potatoes.

While at our campsites, I make a lot of our side dishes in the Instant Pot while the meat cooks on the grill. Here is how I make Corn on the Cob in my Instant Pot:

Corn on the Cob in the Instant Pot
Prep Time1 min

Servings: 4 Servings

Equipment

  • Instant Pot
  • Trivet or Steam Basket

Ingredients

  • 1 CUP Water
  • 4 EARS Corn
  • 2 TBSP Butter

Instructions

  • Set Instant Pot to cook 2 minutes under pressure.
  • Insert trivet or steam basket into Instant Pot and add 1 cup of water.
  • Place 2 ears of corn on each side of the trivet.
  • Place 2 ears of corn on top of the previous ears in the opposite direction.
  • Add 2 tablespoons of butter.
  • Now close the lid and set release value to seal.
  • Once the Instant Pot has cooked for 2 minutes under pressure, manually release pressure.
  • The corn will be hot, be sure to use tongs or silicone gloves to remove the ears.
  • Now add more butter and enjoy!
