A snow day calls for soup. We received 10 inches snow and I am working from home. I needed a quick, easy and delicious lunch to warm me on this cold day. TOMATO SOUP… and a side of grilled cheese of course. You can not have tomato soup without a grilled cheese sandwich.. it is just not done in the south. I can not believe I have not shared this recipe before today… so without further ado! Enjoy and stay warm.

Instant Ace Tomato Soup
Equipment
- Instant Ace Blender
Ingredients
- 28oz can Peeled Tomatoes
- 1 3/4 cups Vegetable Stock
- 1/2 diced Yellow Onion
- 1 tbsp Minced Garlic
- 3 tbsp Tomato Paste
- 1 1/2 tbsp Sugar
- 1 tsp Italian Herbs
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 3 tbsp Butter
- 1 tsp Parsley or Basil
Instructions
- Add Peeled Tomatoes, Vegetable Stock, diced yellow onion, minced garlic, tomato paste, sugar, Italian Herbs, Salt, and Pepper to the Instant Ace Blender.
- Lock on the lid.
- Press Soup.. button. The soup will cook in 20 mins.
- Add 3 tbsp of butter and locked the lid in place.
- Press pulse and allow to blend for 30 secs.
- Pour into a bowl and garnish with your preference of Basil or Parsley. Enjoy with a side of grilled cheese of course!!
